Made with a mix of beautiful apples hand-picked at Covey Hill. Not actually baked, but so named because it reminds me of the wintertime dessert of baked apples stuffed with brown sugar, rum-soaked raisins and walnuts. This is delicious on ice cream or oatmeal, and probably on a lot of other things as well.

This is easily one of my favorite summer fruits, and I can't say I've ever seen it anywhere else than Quebec, though I feel like the black raspberry artificial flavour was certainly inspired by the real thing. This is a rare and original jam made with M. Legault's incredible fruits. Firm set.

This is the quintessential marmalade. Sevilles are bitter oranges available in a short period during January and February. Their sour juice, high pectin content and full flavour makes them perfect for preserving. This is purists' marmalade, but anyone can enjoy it. Firm set.

I have to say, I'm kind of proud of this one. The jelly has a beautiful set, an exhilaratingly tart flavour-- bracing but elegant on account of the amazing vanilla beans (from a secrect source), and a lovely transluscent yellow colour, dotted with tiny black specks. Bring on the scones.

This is similar to the classic Seville orange marmalade, but a little headier. It has a really rich, molasses-y brown sugar flavour that compliments with the bitter orange. Dark rum, rich and brown sugary itself, is a natural companion. Firm set.
